1-Low-Calorie Broccoli Soup for weight loss

Ingredients

100g leeks

1 onion

454g broccoli

¼ tsp black pepper

2 tsp sunflower oil

1 tsp soy sauce

2 pints vegetable stock

300g potatoes

¼ tsp salt

Instructions

Step1: Wash the leeks and chop it

Step2: Peel off the onion and potatoes. Chop it

Step3: Wash the broccoli and cut it into small pieces

Step4: Put the oil into the pan and fry the onion until tender

Step5: Add the potato, soy sauce,  stock, and broccoli to the pan. Wait until it boils

Step6: When cooked blend it. Now add little salt and pepper

2-Winter Broccoli Soup Recipe

Ingredients

1 Tbsp olive oil

500g broccoli

3-4 cloves of garlic

1 medium onion

1 medium potato

Salt

Black pepper

Italian herbs

½ Cup Milk  (optional)

1-2 glass water 

Instructions

Step1: Cut the garlic, broccoli, onion into medium pieces but potato in smaller pieces

Step2: Heat the oil in the pan and add onion, garlic and fry for 5 mins.

Step3: Add potato and cook for about 5-10 mins.

Step4: Add broccoli, 1-2 glasses of water, and boil it until broccoli and potato cooked

Step5: Take off the pan and blend it 

Step6: Pour this blended mixture into the pan again and cook until it thickens

Step7: Add milk if you like and cook for 2-3 mins.

Step8: Season with pepper and salt. Sprinkle with Italian herbs

3-Broccoli and almond soup

Ingredients

Broccoli florets 1 cup

Butter 1tbsp

Sliced onion 1/2 cup

Grated garlic 1tbsp

Sliced potato 1/4 cup

Almond nuts 6-7

Whole milk 1 cup

Suger (optional) 1/2 tsp

Pepper 1/2 tsp

Salt to taste

Instructions

Step1: Melt butter. Add garlic and onion. Saute for a min. Add potato and saute it

Step2: Add broccoli florets and toss them in a high flame. add 1 cup of water. Mix well. Add salt stir and cook. 

Step3: Cook for 1 whistle. Broccoli should be soft. Allow it to cool. 

Step4: Strain the water. Add the mixture into the blender and almond. Blend it to make a smooth paste. 

Step5: Transfer it to saucepan add 1/2 cup of water and milk. Stir well and heat at the medium flame. Add salt sugar and pepper. Let the soup boil and turn off the flame

Broccoli 250g

Sliced carrot 1/2 cup

Vegetable stock 3 cups

Garlic 8-9 cloves (chopped)

Ginger 1-2 inch piece

Green chilies 2

Onion 1 medium

Cumin seeds 1/2 tbsp

vinegar 1 tsp

Corn flour 1tbsp

Black pepper powder 1 tsp

Salt to taste

Oil 1tbsp

Instructions

Step1: Heat the oil and add garlic, green chilies, and cumin seeds. Fry it for about 1 min.

Step2: Now add broccoli florets, onion, and carrots. Fry it for about 3-4 mins.

Step3: Add stock and simmer it for 15 mins. on medium flame

Step4: Add salt, black pepper, cornflour, and water. Boil it until soup is ready ( boil to achieve your desired consistency)

2 cups broccoli florets

2 tablespoons tomato paste

2 bay leaves

pepper to taste

2 cups sliced zucchini

1 small onion diced

2 whole bell peppers chopped

1 can 28 oz low sodium diced tomatoes

6 cups low sodium beef broth( can use vegetable also)

2 cloves garlic minced

1 cup diced carrots

4 cups chopped cabbage approx. 1/4 head of cabbage

1 cup green beans 1″ pieces

Instructions

Step1: In a large pan cook garlic snd onion over a medium flame until the onion is softened.

Step2: Add green beans, carrots, cabbage, and cook for 5 mins.

Step3: Add bell peppers, tomatoes, bay leaves, broth, and cook it for 6-7 mins.

Step4: Add in zucchini & broccoli. Simmer an additional 5 minutes or until softened.

Your weight loss soup is ready. Before serving remove the bay leaves


6-Ridiculously Easy Cream of Broccoli Soup

Ingredients

Broccoli 6-7 cups chopped

2-4 cloves garlic peeled

4 cups vegetable broth

1 large Yukon gold potato cooked, peeled, and diced

1/4–1/2 cup raw cashews

Salt black pepper, and cayenne, to taste

Instructions


Step1: Place the garlic, onion, broccoli, and vegetable broth in a saucepan.

Step2: Boil it and cook until broccoli tender for about 8 mins.

Step3: Now blend this mixture with cashews and potato

Step4: Heat the pan again and pour the soup cook it for almost 10 mins.

¼ cup (60 ml) vegan butter or olive oil

5 cups (360 grams) broccoli, chopped

⅔ cups (100 grams) chopped onion

2 cloves garlic, minced

⅔ cup (100 grams) chopped carrots

⅔ cup (100 grams) chopped celery

6 tbsp (65 grams) flour

¼ cup (20 grams) nutritional yeast flakes

1 tsp (5 ml) white wine vinegar or lemon juice

4 cups (1000 ml) vegetable broth

2 cups (500 ml) original non-dairy milk

¾ cup (185 ml) full-fat canned coconut milk

½ tsp (2.5 ml) salt, to taste

Black pepper, to taste

Browned broccoli croutons

1 tbsp (15 ml) olive oil

Salt, to taste

1 cup (70 grams) broccoli florets

Instructions

Step1: In a pan heat the oil or butter and add garlic, onion, celery, carrot, and broccoli. Cook for about 5 mins.

Step2: Sprinkle flour with vegetables and cook for 1-2 mins with continuously stirring

Step3: Now add non-dairy milk and vegetable broth gradually (stir continuously). Add yeast and coconut milk. Cook for 10-15 mins. or until vegetables are tender

Step4: Cool and blend it. Add salt, pepper, and vinegar according to taste

Browned broccoli croutons

In another pan heat the olive oil

Add broccoli florets and sprinkle with salt. Cook it until broccoli turns the brown or black edge

Serving

Pour soup into the bowl and sprinkle a little bit of oil, top with cooked broccoli. Add cheese shreds and black pepper

8- Healthy broccoli oat soup

Ingredients

1/4 cup dry roasted powdered oats

Water

Salt, and pepper powder (as per taste)

A little bit of sugar ( half tablespoon)

1 cup boiled broccoli


Instructions

Step1: Put the oat into the pot and add water ( water 3 times than oat quantity)

Step2: Add salt, sugar, and pepper powder. Mix well

Step3: Turn on the flame and put the prepared mixture onto the flame and stir continuously. Bring it to boil you can add more water according to your desired consistency

Step4: Add broccoli and pour it into the bowl and serve it. You can add half tbsp butter for good taste

9-One-Pot Broccoli Cheddar Soup


Ingredients

2 heads broccoli, chopped 

¼ cup butter

½ cup of carrots, shredded 

2 cups (8 ounces) cheddar cheese

¼ cup flour 

½ onion diced

¼ teaspoon nutmeg

2 cups half-and-half

2 cups vegetable stock (you can use chicken stock also)

2 teaspoon salt

1 teaspoon pepper 


Instructions

Step1: Chop the broccoli into small florets. 

Step2:  In a saucepan, mix onion and butter, saute until translucent. 

Step3: Add flour and stir on medium flame until light brown color appear. 

Step4: Stir well 

Step5: Add the vegetable stock and wait for 5-10 minutes. 

Step6: Mix in the broccoli,  salt, carrots, pepper, and nutmeg. Simmer it on low heat for 10-15 minutes. 

Step7: Add the cheddar cheese and stir it until it melts and mixes with all ingredients

10-Broccoli & Toasted Pine Nut Soup

Ingredients

Broccoli - 1 Medium

Pine Nuts 1/4 cup

Onion - 1 Medium Size

Green Chillies - 2

Cumin Seeds - 1 tbs

Garam Masala Powder - 1 tbs

Lemon Juice - 1 tbs

Fresh Cream - 1/2 cup

Butter - 1tbs

Salt

Toasted Pine Nuts

Instructions 

Step1: Add butter into the pan and melt it. Add cumin seed and fry it.

Step2: Add onion and saute it then add broccoli florets. 

Step3: Add two green chilies, salt, and garam masala.

Step4: Add water to it. After one boil strain it and blend it. Transfer it to the pan and add strained water. Add pine nuts, lemon juice, and fresh cream. Step5: Switch off the flame. Pour soup into the bowl and add remaining pine nuts
