1 cup carrots - 1/4-inch slices
2 teaspoons olive oil
1/2 cup chopped onion
1 clove of garlic, crushed
1/2 teaspoon salt + pepper to taste
1 cup kale - thinly sliced
1 cup broccoli florets
1 cup cauliflower - bite-size pieces
4 cups chicken stock or vegetable stock
1 cup cabbage - coarsely chopped
3/4 cup canned diced tomatoes, no salt, lightly drained (1/2 of a 14.5 oz can)
Instructions
Step1: Heat the oil in a pot. Saute garlic and onion for 2 min.
Step2: Now add kale, carrot, cabbage, cauliflower, and stock.
Step3: Reduce heat and cover it and boil. Cook for 8 mins.
Step4: Add tomatoes, salt, pepper, and broccoli. Cook for another 2 mins.

2 cups carrots, diced
1–2 tablespoons olive oil
1/2 cup lentils
2 bay leaves
1 zucchini, diced
1 cup mushrooms, diced
1 onion, diced
2–3 celery stalks, sliced
3 garlic cloves
Salt and pepper, to taste
1/4–1/2 teaspoon red pepper flakes (use less if you don’t like heat)
2 tablespoons tomato paste
1 can black beans, drained and rinsed
1 teaspoon dried Italian seasoning
12 cups of chicken or vegetable broth
1 28-ounce can of crushed tomatoes
1 cup cauliflower, chopped finely
1 cup broccoli, chopped finely
2–3 cups spinach, chopped
1–2 cups frozen green peas
Instructions
Step1: Heat the oil in a large pot on medium heat. Saute carrot, onion, and celery for 4-5 mins.
Step2: Add garlic and cook for about 1 min. Season with pepper, salt, red pepper flakes, and Italian seasoning
Step3: Now add broth, tomato paste, crushed tomatoes, lentils, black beans, and bay leaves. Bring it to a boil and simmer for about 10-15 mins.
Step4: Add mushrooms, cauliflower, zucchini, broccoli, and simmer for about 5-10 mins.
Step5: Stir in the frozen peas and spinach. Turn heat to low and remove bay leaves. Adjust seasoning
Step6: Serve it

12 black peppercorns

6 unpeeled cloves garlic, halved

Instructions
Step1: Rinse all the vegetables and kombu. Mix bay leaves, juniper berries, peppercorns, carrots, onion, leeks, celery, garlic, sweet potatoes, parsley, and kombu in a stockpot
Step2: Add water till all the ingredients dip into the water. Cover it and turn on the flame
Step3: After boiling reduce the heat and simmer for about 21/2 hours

1 1/2 cups onions
1/2 tsp black peppers
1 cup diced carrots
7-8 cups of water
1 cup diced celery
1 tbsp minced garlic, about 2-3 cloves
1 cup oat groats (or barley)
1 1/2-2 tsp kosher/sea salt
2 smaller bay leaves (or 1 large)
3 cups Napa cabbage
1 1/2 tbsp dried dill (or 1/4 cup fresh)
3/4 pound mushrooms, sliced (about 3 1/2 cups)
1 1/2 tsp dried thyme (or 1 tbsp fresh)
juice of 1/2-whole lemon, about 2tbsp
several cups additional greens like spinach or kale, fresh herbs
1/4 cups fresh parsley, additional for garnish if desired

Step1: In a hot pot saute onions with a small amount of water until translucent
Step2: Add mushrooms, celery, and carrots. Saute it for 3 mins. or until softened
Step3: Add herbs, salt, pepper, groats, bay leaves, and water. Cook it for 1 hour.
Step4: Now add cabbage and cook another 1/2-1 hour or until oat becomes chewy
Step4: Add parsley, greens, and lemon juice just before serving

2 t. ground cumin
1 cup lentils
28 raw almonds (chopped)
1 large onion (chopped)
1 T. minced fresh ginger
2 large garlic cloves (minced)
5 oz. baby kale or baby spinach
Kosher salt (to taste)
2 T. curry powder
2 1/2 c. low-sodium chicken or vegetable broth
1 medium sweet potato (about 8 oz., peeled and cut into 1/4-in. cubes)
1 cup plain, non-fat Greek yogurt
Instructions
Step1: In a large skillet spray the olive oil or cooking oil and heat it. Add onion and saute for 5 mins
Step2: Add ginger, cumin, curry powder, and garlic saute for 1 min.
Step3: Now add broth, lentils, and oil it. Simmer for 10 mins.
Step4: Add sweet potatoes and wait until tender about 10 mins.
Step5: Add kale/spinach and cook for 1-2 mins. season to taste(add salt)
